Ooooooh. I wish I could take credit for these cupcakes, but I can't! I got the recipe from skinnytaste.com. It's a nice little blog, and I haven't really had time to look at it today. I did see another recipe that I might try out tonight.
Anyway, these were AWESOME. I made them for my boyfriend because he loves pineapple and he's trying his best to watch what he eats. I think he's going to love these. In the frosting, I did mix 3 packets of Splenda in. It doesn't change the calorie count, but it does give it a little more sweetness to it. Without it, it tasted a little too "cream cheesy" to me.
